Hola – do you wanna take a quick trip to Mexico while staying in the comfort of your house? We can help you take off, with these easy and quick recipes that will make you feel like you are there. I know how we love tacos or the traditional guacamole, but how about testing new recipes that will make you go loco?

Do not rush to Chipotle whenever you have a Mexican food craving – as the saying goes, the best food is homemade. Dig into our Mexican recipes that will be better than takeout options.,

You will only need 10 minutes and some fresh ingredients to get a delicious burrito bowl. Plus, this is completely customization to add in your favorite proteins. You will need rice, one cup of salsa (it can be homemade or store-bought), lettuce, drained kernel corn, diced tomatoes, diced avocado and of course freshly chopped cilantro. You can take any type of protein source, whether chicken or tofu… Cook your protein with spices of your choice.

For the sauce you will need; sour cream, garlic, lime juice, chipotle sauce and salt to taste. Simply whisk together all the ingredients. Cook the rice according to the packet directions; put the rice at the bottom of the bowl then top with the other ingredients and the sauce and you are good to go.

Chili-Stuffed Poblano Peppers

For this recipe, you will need ground turkey, chili without seeds, Mexican cheese, finely chopped tomato, chopped green onions, 4 large poblano peppers, and olive oil. In a baking sheet Arrange your poblano peppers, in a baking tray, making sure to not overlap them so they can bake evenly. In a large skillet, add the ground beef, rice, cumin, chili, and garlic powder. Sautee everything until cooked. When cooked, add in your black beans, tomatoes, chilies, and corn.

Put the mixture into your poblano peppers, and bake for one to two minutes. Sprinkle cheese, and bake until cheese is melted. Allow cooling for serving.

I am a big fan of soup; I feel like they are very comforting as they are hot. But this shrimp gazpacho changed my mind, I’ve never loved a cold soup as much as I love this. For this recipe your need: tomato and clam juice cocktail, cooked shrimp, chopped avocados, cubed cucumbers, diced tomatoes, red onions, chopped cilantro, lemon juice, salt, and pepper. In a large bowl, mix the tomato and clam juice cocktail, shrimp, avocados, cucumbers, tomatoes, red onion, cilantro, lemon juice, salt, and pepper, then put in the refrigerator until ready to serve. Nothing easier and tastier than that, you should absolutely give it a try.

Chiles en escabeche

Chiles en escabeche, also known as pickled jalapeños, is a Mexican side dish that goes with everything. You will need jalapeño (chilies), olive oil, thickly sliced yellow onions, thickly sliced carrots, unpeeled garlic, apple cider vinegar, sea salt, bay leaves, dried oregano, thyme and sugar. Wash the chilies and cut the tip (it will allow the vinegar to penetrate the chilies). Fry your veggies in olive oil, boil everything with the vinegar and seasoning and store in sterilized jars.

These are my favorite go-to whenever I want to eat some Mexican food. I know that there are no tacos- but trust me, try these lesser-known recipes and you will thank me later. You may have noticed that I haven’t put written the measurements for the ingredients, because I am a firm believer that everything is to taste, so if you like avocados, put as much as you want.
